Food Storage Pancakes
"Dearly we learned to love the Platte. Even if the way was dreary at time, we forgot it when passing along the river banks. During that month, we ate, each one of us, that peck of dirt—if sand may be classed as dirt—which every man is said to eat in his life time. It filled our eyes, too, and our ears and our nostrils. It was in the food. It sprinkled the pancakes, it was in the syrup that we poured upon them. Half suffocated we were at times by it as we lay at night beneath the wagons. O ye sandhills of the Platte. Indeed we have cause to remember!"
We were looking at our standard pancake recipe and how can we adapt them for a family of 10. We don't have a family of 10, but wanted to use this recipe when cooking for a large youth group that will be camping in families of 10. (An LDS Trek, handcart recreation)

We wanted to develop a recipe that call for no refrigeration. So that takes out eggs and milk. To replace the eggs we wanted to use applesauce for a little bit of texture and taste. It also needs a little bit of fat to replace the egg yolks, so we added another tablespoon of oil.

For the milk the easiest way is to use powdered milk. We keep a lot of that on hand in our food storage. No one likes to drink it, but it is great to use in cooking and keeps it rotated. As we like to make cheese we also use whey in place of milk.

Ingredients

  • 3 cups flour (preferably whole wheat)  
  • 1 1/2 tablespoon Baking Powder 
  • 1 1/2 teaspoon salt 
  • 1 1/2 teaspoon baking soda 
  • 1/2 cup vegetable oil 
  • 1/2 cup of apple sauce + 1 extra tablespoon of oil (or 3 large eggs) 
  • 1/3 cup powered milk and 3 cups water (or 3 cups whey or milk) 

Directions

Mix together dry ingredients (including the powered milk if using). Add liquid ingredients quickly and whisk until just incorporated. Spoon out quarter cup rounds onto a 350 degree griddle. Cook 2 minutes on the first side. Flip and cook a minute longer.

Makes 40, 1/8 cup pancakes
